Chicken, Roasted Red Pepper & Spinach Cast-Iron Skillet Pizza

Use a good store bought pizza dough if you are crunched for time, or make your own favorite pizza dough recipe!

Ingredients

  • 1 jar roasted red peppers, rinsed and patted dry
  • 1/2 sweet yellow onion, chopped
  • 1 tablespoon olive oil
  • 3 cloves garlic, peeled
  • 3 tablespoons parmesan cheese, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 prepared ball of pizza dough
  • 1 bag Springer Mountain Farms Fully Cooked Fresh Oven Roasted Chicken Breast Strips*
  • 1/2 cup fresh spinach, chopped
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup goat cheese, crumbled
  • Fresh basil for garnish
  • Crushed red pepper flakes for serving (optional)
  • 1 tablespoon olive oil for garnish
  • Sea salt for garnish

Instructions

  1. Place oven rack on lowest level of oven and preheat the oven to 450°F, placing cast iron pan in oven during preheat.
  2. Combine roasted peppers, onion, olive oil, garlic cloves, parmesan cheese, salt and pepper in a blender or food processor and puree until smooth; adjust seasoning as needed.
  3. Toss, Roll or stretch pizza dough on a lightly floured surface a little bit bigger than the width of your skillet (enough to roll edges to make crust).
  4. Remove preheated pan from oven (remember to keep something on the handle so you don't burn yourself!) and place dough in the pan, pushing excess to edges to make thicker edge crust.
  5. Spread red pepper sauce over the dough; top with chicken, spinach and cheeses.
  6. Bake until crust is browned and cheese are bubbling (about 15 -20 minutes).
  7. Remove pizza from oven, garnish with basil, crushed red pepper, and brush outer crust lightly with olive oil and sprinkle with sea salt, if desired.

Notes

*Don't have the fully cooked strips available? Substitute with any pre-cooked or fully cooked Springer Mountain Farms chicken cut into bite sized slices or pieces.
