Ansley shows how easy it is to make your own Tzatziki Sauce using fresh cucumbers, Greek yogurt and fresh herbs as the base of this flavorful chicken pasta salad.
Ingredients
- 1 English cucumber, divided in half
- 1 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 1 clove garlic, minced
- 1 teaspoon salt
- 2 tablespoons dill, chopped
- 2 tablespoons mint, chopped
- 1 pint grape or cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1 bell pepper, diced
- 1/2 cup pickled red onion or diced fresh red onion
- 8-12 ounce box pasta, cooked to according to package directions
- 2-3 Springer Mountain Farms Boneless Skinless Chicken Breasts, cooked and diced into bite sized pieces
- 6 ounces feta cheese, crumbled
- Salt and pepper, to taste
Instructions
- Make the Tzatziki sauce by grating half of the cucumber over a few paper towels, and squeezing out the excess moisture.
- Add the drained, grated cucumber, yogurt, lemon juice, garlic, mint and dill to a bowl and combine until mixed well.
- Dice the rest of the cucumber and add to a large bowl with the cooked, dice chicken, cooked pasta, sliced tomatoes & olives, bell pepper, red onion and feta cheese.
- Add desired amount of Tzatziki sauce to the bowl and toss to combine.
- Season with salt and pepper, to taste and add more crumbled feta cheese if desired.
