- 3 Springer Mountain Farms Boneless Skinless Chicken Breasts
- 1/4 cup shredded Parmesan
- 1 cup Italian style bread crumbs (for low-carb, substitute with pork panko)
- 2 eggs
- 1/2 cup marinara sauce
- 1/2 cup mozzarella cheese
Instructions
- Cut chicken breasts in half lengthwise and pound until even thickness.
- In a bowl, mix together bread crumbs (or pork panko, if using) and parmesan cheese.
- In a separate bowl, whisk together eggs.
- Dip chicken in the egg mixture, then bread crumb mixture.
- Preheat the air fryer to 360°F.
- Place chicken in the air fryer basket and set cook time for 10 minutes.
- Halfway through cooking time, flip the chicken, spoon a little marinara onto each piece, and top with mozzarella cheese. Cook for remaining time or until internal temperature reaches 165°F.
