- 1.5 lbs Springer Mountain Farms Boneless Skinless Breasts
- 1 tablespoon olive oil
- 3/4 cup low-sodium chicken broth
- 1 clove garlic, minced
- 1/4 cup fresh lemon juice
- 1 teaspoon fresh oregano, minced
- 1 teaspoon fresh basil, minced
- 4 oz. jar capers, drained
- Salt and pepper
Instructions
- Set Instant pot to sauté setting and add oil. Season both sides of the chicken with salt and pepper, and place in Instant Pot. Sauté for about 4 minutes each side (until browned) and set aside.
- Add garlic, and cook for about 1 minute until fragrant.
- Add broth, lemon juice, and herbs. Return chicken to Instant Pot and add capers.
- Attach lid to Instant Pot and make sure the vent is sealed. Set Instant Pot to manual for 10 minutes. When time is up, quick release the pressure. With a thermometer, make sure chicken has reached an internal temperature of 165°F. Enjoy!
