Ingredients

  • 1.5 lbs Springer Mountain Farms Boneless Skinless Breasts
  • 1 tablespoon olive oil
  • 3/4 cup low-sodium chicken broth
  • 1 clove garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 teaspoon fresh oregano, minced
  • 1 teaspoon fresh basil, minced
  • 4 oz. jar capers, drained
  • Salt and pepper

Instructions

  1. Set Instant pot to sauté setting and add oil. Season both sides of the chicken with salt and pepper, and place in Instant Pot. Sauté for about 4 minutes each side (until browned) and set aside.
  2. Add garlic, and cook for about 1 minute until fragrant.
  3. Add broth, lemon juice, and herbs. Return chicken to Instant Pot and add capers.
  4. Attach lid to Instant Pot and make sure the vent is sealed. Set Instant Pot to manual for 10 minutes. When time is up, quick release the pressure. With a thermometer, make sure chicken has reached an internal temperature of 165°F. Enjoy!
