Ingredients

  • 4 Springer Mountain Farms Boneless Skinless Chicken Breasts
  • 1 cup Greek dressing 
  • 2 red bell peppers, sliced
  • 1 red onion, sliced into eighths
  • 10 whole garlic cloves
  • 1 lb baby potatoes, halved
  • 1/4 cup crumbled Feta
  • 1/4 cup Kalamata olives
  • 2 lemons, halved
  • Flat-leaf parsley, chopped

Instructions

  1. Preheat oven to 400°F.
  2. In a zip-top bag, add chicken, and Greek dressing. Marinate for 1-3 hours.
  3. Arrange vegetables on a sheet pan.
  4. Place chicken on sheet pan with vegetables.
  5. Place lemon wedges around sheet pan.
  6. Roast in oven for 35 minutes or until chicken reaches an internal temperature of 165°F.
  7. Garnish with flat-leaf parsley, crumbled feta, and olives.
  8. Enjoy!
