Air Fryer Lemon Chicken Strips

This zingy chicken dish is great for a prepping ahead and can be added to a variety of dishes.

Ingredients

  • 1 lb Boneless Skinless Chicken Breasts, sliced
  • 4 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 cloves chopped garlic
  • 1 teaspoon salt
  • 1 teaspoon lemon pepper
  • 1 teaspoon basil, chopped

Instructions

  1. Cut the chicken into thin strips and place in a dish or disposable bag.
  2. Add lemon juice, olive oil, garlic, salt, lemon pepper and basil, and toss chicken with marinade until well coated.
  3. Place in fridge to marinate for at least 30 minutes but not more than 4 hours, or the lemon juice will start to "cook" the chicken.
  4. Heat air fryer to 375F,
  5. Place chicken in air fryer basket, but don't overcrowd pieces (cook in batches if needed).
  6. Cook for 8 minutes or until internal temperature of chicken pieces reach 165F. (toss in basket about halfway through cook time)
  7. Serve over air fryer "roasted veggies", steamed rice, or riced veggies.
