Smoked Chicken Parmesan

Ingredients

  • 2 Springer Mountain Farms Boneless, Skinless Breasts
  • 3 eggs
  • 3 teaspoons minced garlic, divided
  • 1 1/2 teaspoons Italian seasoning, divided
  • 1/2 cup olive oil
  • 1 cup panko bread crumbs
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • 1/2 cup parmesan cheese, divided
  • 2 cups marinara sauce
  • 8 slices mozzarella cheese, plus shredded mozzarella cheese
  • 12 oz angel hair pasta

Instructions

  1. Slice SMF Chicken Breast in Half horizontally or use SMF Chicken cutlets. (Make sure the chicken is thin.)
  2. Beat together 2 eggs and place in a zip lock bag with the chicken breast, 1 teaspoon minced garlic, and ½ teaspoon Italian seasoning.
  3. Place in the refrigerator to marinate for at least 1 hour.
  4. In a Cast Iron Skillet heat your olive oil on medium heat with 2 teaspoons of minced garlic.
  5. Mix panko crumbs with ½ teaspoon garlic salt, ¼ cup parmesan cheese, ¼ teaspoon pepper in a bowl.
  6. Remove the chicken from the refrigerator and coat evenly with the panko crumb mixture.
  7. Preheat Smoker to 350 degrees.
  8. Brown the chicken in the oil around 3-5 minutes per side until golden brown.
  9. Place Marinara sauce in bottom of oven/grill safe casserole dish.
  10. Place the browned chicken on top of the marinara sauce, and top each piece of chicken with 2 slices of mozzarella cheese, ¼ cup parmesan cheese and sprinkle Italian Seasonings on top.
  11. Place on the smoker for around 30 minutes and then top with more shredded mozzarella cheese and bake 5 to 10 more minutes.
  12. Pairs well with angel hair pasta, garlic bread, and salad.
