Parmesan Chicken Meatball Power Bowl

Ingredients

  • 2/3 cup whole wheat panko breadcrumbs
  • 1/4 cup unsweetened plain almond milk
  • 2/3 cup grated parmesan cheese (about 2 ounces)
  • 1 egg
  • 1 teaspoon kosher salt (or to taste)
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper
  • 1 tsp dried parsley
  • 1 lb Springer Mountain Farms Ground Chicken

Instructions

  1. Preheat oven to 400°F.
  2. Mix together the first 10 ingredients in a bowl until well combined.
  3. Mix the ground chicken into the bowl making sure all of the ingredients are evenly mixed with the ground chicken.
  4. Form 10-12 meatballs with the mixture.
  5. Bake for 20-25 minutes or until the internal temperature of each meatball reaches at least 165°F.
  6. Add the cooked meatballs to a pot of simmering marinara, and serve over spaghetti squash, zucchini noodles or low carb pasta.
  7. Garnish with additional parmesan when serving.
