- 4 Springer Mountain Farms Individually Portioned 4 oz Breast Filets
- 4 teaspoons pesto sauce (commercially prepared or homemade)
- 8 thin slices of tomato
- 1/4 cup fresh basil, chopped finely
- 1 cup Italian blend cheese, shredded
- 1/4 cup parmesan cheese, grated
- Salt & Pepper, to taste
Instructions
- Preheat oven to 400°F and cover a sheet pan with aluminum foil. Remove the chicken breast filets from packets and season both sides with salt and pepper.
- Spread 1 teaspoon of prepared pesto over each breast piece.
- Place on sheet pan and cook for 20 minutes.
- While chicken is cooking, season tomatoes with salt, pepper and basil and let sit and sweat until chicken has cooked for 20 minutes.
- Remove chicken from oven and turn broiler on high.
- Place 2 tomato slices on each chicken filet, spread 1/4 cup of the Italian cheese blend on each and sprinkle parmesan cheese evenly over the pieces.
- Place back in top rack of oven about 5 inches from broiler heat source, and broil for a few minutes until cheese is melted and bubbly.
- Serve with sautéed zucchini slices, pasta, rice or potatoes.
