- Springer Mountain Farms Whole Chicken*
- Four41 South’s Monk McGuire’s Honeysuckle Dust (four41south.com)
- King’s Hawaiian dinner olls
- 4 oz Unicoi Preserves Apple Cider Pepper spread (unicoipreserves.com)
- Palmetto Cheese Jalapeño Pimento Cheese (or your favorite pimento cheese recipe)
- Wickles pickles
Instructions
- Cover the whole chicken with the Four41 rub and smoke over indirect heat at 250°F until the breast meat reaches an internal temperature of 165°F.
- Remove chicken from smoker and let rest, covered in foil, until cool enough to handle.
- Remove the skin and shred or pull the breast, leg and thigh meat. (Wings can be reserved for another use or for “Cook’s Treat”!).
- Heat up the jar of Unicoi Preserves Apple Cider Pepper Spread in a sauce pan, add chicken and heat thoroughly, coating all of the chicken.
- Split the dinner rolls in half and toast lightly.
- Top with chicken mixture, a dollop of jalapeno pimento cheese and garnish with a pickle slice.
- *For a quicker cooking time, spatchcock the chicken (remove backbone and flatten) before cooking. Alternately, you could use boneless, skinless breasts and thighs in place of the whole chicken.
- Alternative Cooking Methods: Direct grill them at 350°F or roast in a 350°F oven until internal temp reaches 160°F, then cool and shred.
